the roasted cabbage was delicious.  if you love cabbage or brussels sprouts or earthy-tasting goodness, i highly recommend this.  slice about an inch thick, brush with oil on both sides, salt, pepper, roast at 400 about 45 min., turning once.  Honestly, brussels sprouts are expensive and cabbage is damn near free…

the quinoa cakes were also really good.  I sort of adapted a few recipes i found online based on what I have in the house.  here’s what I did.

  • about 1 cup cooked quinoa (about 1/2 cup dry)
  • 2 eggs
  • small onion
  • couple cloves of garlic
  • couple of baby carrots
  • parmesan
  • breadcrumbs

Cook the quinoa.  While it’s cooking/cooling, throw the onion, garlic, and carrots into the food processor or finely mince.  Beat the eggs, then add the veg mixture and the slightly cooled quinoa.  Add about a handful of breadcrumbs and maybe 1/4 cup of cheese.  Stir, adding more breadcrumbs if necessary so it comes together.  Salt, pepper.

The recipes I found said to make this pretty stiff and form into patties with your hands, but i left mine a little looser and spooned the mixture into the pan and it worked really well.  Pan fry in a little oil over medium heat, drain on a paper towel, salt to taste, eat.
